Bacon Wrapped Beef Tenderloin

These Bacon Wrapped Beef Tenderloin Bites are the ultimate appetizer for any occasion. Juicy filet pieces are seasoned and wrapped in smoky bacon, brushed with maple syrup, and baked until crisp on the outside and tender inside. Ingredients  

For the Beef

  • 1 lb beef tenderloin (filet)
  • 12 slices thin cut bacon
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 2 tbsp maple syrup

For the Horseradish Sauce

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 shallot finely diced
  • 1 tbsp Dijon mustard
  • 1 tsp lemon juice
  • 1 tsp prepared horseradish
  • 1/2 tsp black pepper
  • 1/4 tsp salt (more to taste)
  • Green Onions for garnish

Method 

  • Set oven to 400°F and line a baking sheet with parchment paper. Arrange bacon slices without overlapping and bake for 5 to 6 minutes, just until the fat begins to render and the slices are flexible but not crisp. This ensures the bacon cooks fully later without overcooking the beef.
  • Increase oven temperature to 425°F. Cut the beef tenderloin into 1-inch cubes. In a bowl, toss with olive oil, salt, pepper, garlic powder, and smoked paprika until evenly coated.
  • Once the bacon is cool, wrap each piece around a beef cube and secure with a toothpick. Place each bite seam side down on a foil lined baking sheet fitted with a wire rack. Cook for 15 to 18 minutes, brushing maple syrup on the bacon halfway through baking. The beef should be medium rare to medium, and the bacon should be crisp.
  • While the bites bake, combine mayonnaise, sour cream, diced shallot, Dijon mustard, lemon juice, horseradish, pepper, and salt in a bowl. Stir until smooth and creamy.
  • Arrange the bites on a platter with the sauce for dipping. Garnish with sliced green onions for color and freshness.
