Ingredients
- 2.5 lbs boneless chicken breast
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/3 cup ketchup
- 1 tsp garlic, minced
- 1/2 tsp ginger, minced
- 5 slices of jalapeƱos
- 1/4 tsp pepper
- 1/8 tsp salt
Method
- Add all the ingredients in a ziplock bag and marinate overnight in the refrigerator
- Grill the chicken breast for 5 to 7 minutes on each side or until internal temperature reaches 165 degrees
- In a small saucepan, add reserved marinade and cook on medium high heat until reduced and the consistency of a barbecue sauce
- Glaze cooked chicken with sauce and enjoy!
