Grilled Hawaiian Chicken

Ingredients  

  • 2.5 lbs boneless chicken breast
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/3 cup ketchup
  • 1 tsp garlic, minced
  • 1/2 tsp ginger, minced
  • 5 slices of jalapeƱos
  • 1/4 tsp pepper
  • 1/8 tsp salt

Method 

  • Add all the ingredients in a ziplock bag and marinate overnight in the refrigerator
  • Grill the chicken breast for 5 to 7 minutes on each side or until internal temperature reaches 165 degrees
  • In a small saucepan, add reserved marinade and cook on medium high heat until reduced and the consistency of a barbecue sauce
  • Glaze cooked chicken with sauce and enjoy!
