In a large mixing bowl, beat eggs, milk, water, and vanilla until well combined.
Whisk in flour, sugar, baking powder, and salt until smooth.
Heat oil to 375°F in a deep skillet or fryer.
Using a ¼ cup measuring cup, drop batter into the hot oil. Avoid overcrowding the pan.
Fry for 2-3 minutes per side, until golden brown and crispy. Remove from oil and drain on a paper towel-lined plate.
Dust generously with powdered sugar and serve immediately.
