Ingredients
- 1 1/2 lbs boneless skinless chicken breast
- 1 tsp salt
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/4 tsp smoked paprika
- 1 can (15 oz) great northern beans drained and rinsed
- 1 can (15 oz) corn with juice
- 1 can (10 oz) Rotel
- 1 block (8 oz) cream cheese
- Optional Toppings: chopped green onions, shredded cheese, cilantro, avocado, tortilla slices, and lime wedges
Method
- Add all ingredients to the slow cooker.
- Cook on low for 4 to 5 hours, or until the chicken is fully cooked and tender.
- Shred chicken directly in the slow cooker using two forks, then stir everything together until creamy and well mixed.
- Serve warm with toppings like chopped green onions, shredded cheese, cilantro, avocado, tortilla slices, lime wedge, and a side of homemade cornbread.
