Slow Cooker White Chicken Chili

This Slow Cooker White Chicken Chili is creamy, comforting, and full of flavor. Made with tender chicken, beans, corn, Rotel, and cream cheese, it is the perfect easy dinner for busy weeknights or chilly days.

Ingredients  

  • 1 1/2 lbs boneless skinless chicken breast
  • 1 tsp salt
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1 can (15 oz) great northern beans drained and rinsed
  • 1 can (15 oz) corn with juice
  • 1 can (10 oz) Rotel
  • 1 block (8 oz) cream cheese
  • Optional Toppings: chopped green onions, shredded cheese, cilantro, avocado, tortilla slices, and lime wedges

Method 

  • Add all ingredients to the slow cooker.
  • Cook on low for 4 to 5 hours, or until the chicken is fully cooked and tender.
  • Shred chicken directly in the slow cooker using two forks, then stir everything together until creamy and well mixed.
  • Serve warm with toppings like chopped green onions, shredded cheese, cilantro, avocado, tortilla slices, lime wedge, and a side of homemade cornbread.
