Strawberry Plum Clafoutis with Orange Zest Whipped Cream

Ingredients  

  • 1 1/4 cups whole milk
  • 4 large eggs
  • 1/3 cup brown sugar
  • 1 1/2 tsp pure vanilla extract
  • 1/2 tsp pure almond extract
  • 1/2 cup all-purpose flour
  • Dash of salt
  • 8 strawberries, sliced
  • 3 plums, sliced
  • Powdered Sugar for dusting on top
  • Butter for greasing pie dish and sugar for dusting bottom and sides of dish

Whipped Cream

  • 1 cup of heavy whipping cream
  • 2 tbsps of powdered sugar
  • Zest from half an orange

Method 

  • Butter pie dish and sprinkle in sugar. Roll the dish around so the sugar sticks to the butter
  • In a stand mixer or using a hand mixer, mix together the whole milk, eggs, brown sugar, vanilla extract, almond extract, flour and salt. Blend until there are no clumps
  • Arrange strawberry and plum slices on the bottom of pan, pour batter over the fruit
  • Bake for 30 minutes in a preheated oven at 375 degrees
  • While the clafoutis is baking, add heavy whipping cream to mixer with whisk attachment
  • Whisk on medium, add in zest and powdered sugar
  • Whisk until you have whipped cream, don’t over whisk or you will get butter
  • Top the clafoutis with orange zest whipped cream and powdered sugar
