Creamy, smooth avocados stuffed with a delicious shrimp salad that has a slight crunch and served over crispy shredded lettuce, it’s doesn’t get any better! It’s the perfect appetizer or lunch and is a breeze to whip together. If you love shrimp and avocados, you need to try this recipe!

The first time I had aguacates rellenos de camarones was in Mexico. My family and I were brought out these beautiful avocados stuffed with shrimp, one for each of us at the table. Ever since then, I feel in love with this dish and knew I had to figure out how to make them for my family! This is my rendition of what we ate that night. Here is the original picture I took of what we were served and what my recipe is based off of!

Aguacates Rellenos De Camarones
Ingredients
- 2 avocados
- 1/2 lb shrimp, deveined
- 1/8 onion, diced
- 1/8 red pepper, diced
- 1/2 mini cucumber, diced
- 1 green onion, green part only chopped
- Jalapeño to taste, diced
- 1 tbsp cilantro
- 1 lime, quartered
- 1/4 cup mayo
- salt & pepper to taste
- 1 cup shredded lettuce
Instructions
- Place shrimp in a pot with lightly salted, boiling water. Cook for about 3 minutes or until pink and opaque. Do not overcook shrimp. Once cooled, remove shells from shrimp and cut into about 1/2 inch pieces
- In a bowl mix together shrimp, onion, red pepper, cucumber, green onion, jalapeño, cilantro, juice from 1/4 lime, and mayo. Stir together and set aside
- Cut avocados in half, remove pit and skin from avocados. Drizzle lime juice on top of avocados to keep from browning. Stuff avocados with shrimp salad and place on a bed of shredded lettuce. Add extra cilantro and lime juice on top to serve
