In a large bowl, combine the ground beef, ketchup, mustard, dill relish, salt, and pepper. Mix until fully combined.
Scoop about 1–2 tablespoons of the meat mixture and flatten it into a small disc. Place a cheese cube in the center, then wrap the meat around the cheese and roll gently in your hands until a smooth ball forms and the cheese is fully sealed inside. Repeat until all meatballs are formed.
Crush the Extra Cheesy Cheez-Its into fine crumbs and pour into a shallow bowl.
In a separate bowl, whisk the eggs until fully combined.
Dip each meatball into the egg mixture, then roll in the crushed Cheez-Its until completely coated. Set aside and repeat until all meatballs are breaded.
Heat a skillet over medium heat and add enough neutral oil to lightly coat the bottom of the pan. Once hot, add the meatballs in a single layer (work in batches if needed).
Cook for about 3–5 minutes per side, turning carefully, until golden brown and cooked through (about 12–15 minutes total depending on size).
Remove from the skillet and serve immediately with your favorite dipping sauces.
