These cheeseburger meatballs are bursting with cheese and hamburger flavors with every bite. The perfect game day appetizer and with football season coming up, I know you need these in your life!

Recently my family and I went on vacation to Florida to visit my parents. One of the snacks I packed were Cheez-Its, which I forgot how much I LOVE Cheez-Its! On the way home we ran into a lot of traffic, in which our drive became a 20 hour excursion and my husband drove straight through. Anyone else have a husband who likes to get to their destination with minimum stops?!! Well as the co-pilate I became very addicted to Cheez-Its, it’d been ages since I’d had them, and I kept dreaming about what I could make with them! Cheeseburgers were still on my mind from the 4th of July celebration and so these babies were born! These cheeseburger meatballs are the perfect game day appetizer and with football season coming up, I know you need these in your life!!!

What Makes these Cheeseburger Meatballs:

  • Ground Beef
  • Ketchup
  • Mustard
  • Relish
  • Salt & Pepper
  • Cheddar or Pepper Jack Cheese
  • Extra Cheesy Cheez-Its
  • Dipping Sauces: Ketchup, Mayo, Ranch, the options are endless

Cheeseburger Meatballs

*Makes about 16 meatballs

Ingredients

  • 1 lb ground beef
  • 1 tbsp ketchup
  • 1 tbsp mustard
  • 1 tbsp dill relish
  • Salt & Pepper, to taste
  • 1 cup pepper jack or cheddar cheese cubes
  • 2 cups Extra Cheesy Cheez-Its
  • 2 eggs
  • Neutral oil for pan

Instructions

  • In a large bowl, combine the ground beef, ketchup, mustard, dill relish, salt, and pepper. Mix until fully combined.
  • Scoop about 1–2 tablespoons of the meat mixture and flatten it into a small disc. Place a cheese cube in the center, then wrap the meat around the cheese and roll gently in your hands until a smooth ball forms and the cheese is fully sealed inside. Repeat until all meatballs are formed.
  • Crush the Extra Cheesy Cheez-Its into fine crumbs and pour into a shallow bowl.
  • In a separate bowl, whisk the eggs until fully combined.
  • Dip each meatball into the egg mixture, then roll in the crushed Cheez-Its until completely coated. Set aside and repeat until all meatballs are breaded.
  • Heat a skillet over medium heat and add enough neutral oil to lightly coat the bottom of the pan. Once hot, add the meatballs in a single layer (work in batches if needed).
  • Cook for about 3–5 minutes per side, turning carefully, until golden brown and cooked through (about 12–15 minutes total depending on size).
  • Remove from the skillet and serve immediately with your favorite dipping sauces.

INGREDIENTS:
STRAWBERRY LAYER
2 lbs fresh strawberries hulled and sliced
1/2 cup sugar
1 lemon juiced
2 tsp vanilla extract

MASCARPONE CREAM
2 cups cold heavy whipping cream
16 oz mascarpone cheese softened
2/3 cup powdered sugar
2 tsp vanilla extract

TO ASSEMBLE
14 oz ladyfinger cookies (Savoiardi)
1/2 cup strawberry jam or preserves (optional but delicious)
Extra strawberries for topping

Prep the Strawberries:
In a large bowl, combine the sliced strawberries, sugar, lemon juice, and vanilla. Let sit for 15-30 minutes until juicy.

Make the Mascarpone Cream:
In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla until stiff peaks form. In a separate bowl, gently mix mascarpone until smooth, then fold the whipped cream into the mascarpone until light and fluffy.�
Assemble the Layers:
Lightly dip each ladyfinger into the strawberry syrup (just a quick dunk, don’t soak!)��Arrange a full layer of ladyfingers in the bottom of a 9×13 inch dish. You may need to cut some of the ladyfingers to fit.��Spread half the mascarpone cream over the ladyfingers.��Spoon strawberry jam swirls over the cream (optional but adds amazing flavor), then layer on the macerated strawberries, saving a few spoonfuls to serve on the side.��Repeat the layers: dipped ladyfingers, remaining mascarpone cream, and more strawberry jam swirls for decoration on top.

Chill at least 6 hours before serving, overnight is even better! Garnish with extra sliced strawberries when ready to serve.

The past couple weeks have been full in the best way. Between kids’ sports, family time, and having my Grandma here (she’s 88 and visiting from New Jersey), I just wanted to slow down and really be present for it all.

A lot of real life, a lot of good food, and a lot of moments I didn’t want to rush through.

I’ve missed being on here and sharing with you. Easing back in this week and excited to share more 🫶🏼

INGREDIENTS 
6 cups romaine lettuce chopped (about 3 small heads)
1 small red onion, diced
2 cups frozen peas, defrosted
1 red bell pepper, chopped
7 hard boiled eggs, sliced
1 lb thick cut bacon, cooked and chopped
1 1/2 cups cheddar or colby jack cheese, freshly shredded

DRESSING
1/2 cup mayonnaise
1/2 cup sour cream
1/2 tbsp sugar
1 1/2 tbsp apple cider vinegar
Salt and pepper to taste

INSTRUCTIONS 
Add chopped romaine lettuce to the bottom of a trifle bowl or large glass bowl.

Layer red onion, red bell pepper, and peas around the edges so they are visible from the outside.

Press sliced eggs against the glass for a layered look. Chop the remaining eggs and add them to the center to fill it in evenly.

In a medium bowl, mix together mayonnaise, sour cream, sugar, apple cider vinegar, salt, and pepper until smooth. Spoon the dressing into the center, then gently spread it outward to seal the top.

Sprinkle shredded cheese evenly over the dressing, then top with chopped bacon.

My dad (who doesn’t bake at all) made this cake when I was little, and it’s one of my fav core Easter memories 🤍 It’s so cute, fun to get kids involved with, and instantly makes everything feel a little more fun and special!

INSTRUCTIONS:
Bake your favorite cake in two 8-inch round pans. Let them cool completely, then wrap and freeze for easier cutting.

Keep one cake whole for the face. Cut the second cake to create the ears and bow tie, then arrange everything on a platter.

Frost with white icing and cover with shredded coconut (leave a little space in the ears for pink frosting). 

Decorate with gumdrops, jelly beans, fruit punch straws, or whatever candy you have on hand!

SAVE this for spring or next Easter 🐰
