  • 8 ounces cream cheese softened
  • 1/3 cup mayonnaise
  • 3 green onions white and green parts separated
  • 1 tsp fresh lemon juice plus more to squeeze over the top
  • Salt and pepper to taste
  • 1 lb shrimp peeled and deveined
  • Cocktail sauce

  • Bring a large pot of water to a boil. Add shrimp and boil for 4–5 minutes, or until fully cooked (they should be opaque and reach 145°F). Let cool, then chop into bite-sized pieces.
  • In a mixing bowl, combine cream cheese, mayo, lemon juice, the white parts of the green onion, salt, and pepper. Blend until smooth and creamy.
  • Spread the cream cheese mixture in the bottom of a shallow serving dish. Spoon cocktail sauce over the top and smooth it out evenly.
  • Add the chopped shrimp and sprinkle with the green parts of the green onions. Squeeze fresh lemon juice over the top. Chill until ready to serve. Pair with sliced baguette or crackers.
