Chocolate Turtle Candy

The perfect Holiday Candy does exist and it’s in the form of these homemade chocolate turtles! Filled with rich caramel and toasted pecans, then dipped in delicious melted chocolate and lightly sprinkled with salt flakes, who could resist?! It’s the best homemade gift to make and give to family & friends!

The perfect Holiday Candy does exist and it’s in the form of these homemade turtles! Filled with rich caramel and toasted pecans, then dipped in delicious melted chocolate and lightly sprinkled with salt flakes, who could resist?! Turtle candy has always reminded me of the holidays; when I was little I remember those candy boxes that everyone would buy at the mall and the turtles were my absolute favorite! It was such a happy treat to receive, but now you can make them at home and gift them to all your loved ones.

Tips:

  • Toasting pecans with bring out a wonderful flavor and give them an extra crisp texture to every bite. When toasting be sure to keep an eye on them and bake for only about 5-7 minutes, as they can go from perfectly toasted to burnt really fast
  • When making the caramel sauce, please be very careful when it’s time to add in the heavy whipping cream. You are going to add the whipping cream in slowly, one tablespoon at a time, but when the cream hits the hot sugar it will produce a very hot steam. Make sure you be very cautious when doing this so you won’t get burned
  • You can cut the chocolate or break it into small pieces, this will help the chocolate melt. When adding it to the microwave, you will need to heat it in 30 second intervals at 50% power, stirring in between each time until fully melted. This will help the chocolate melt slowly and not seize up or get a burnt flavor
  • Sprinkling with salt flakes is optional, but does enhance the flavors of the turtle. It’s a wonderful contrast to the caramel and chocolate

Chocolate Turtle Candy

*Makes 12-15 turtles

Ingredients

  • 1 cup sugar
  • 1/2 cup +1 tbsp heavy whipping cream
  • 1 1/2 cup pecans
  • 2 ESC Bold + Silky Dark Chocolate Bars or 1 cup chocolate chips
  • Optional: sea salt flakes

Instructions

  • In a 350 degree preheated oven, toast pecans on a parchment lined baking sheet for 5 to 7 minutes. Remove from oven and set aside
  • Add sugar to a saucepan and cook on medium heat, once the sugar begins to melt, stir with a whisk constantly until sugar is golden brown and completely melted through with no sugar crystals, remove from heat. Add heavy whipping cream one tbsp at a time, continuously whisking until cream is completely incorporated into the sauce before adding the next tbsp. *PLEASE be extremely careful during this step, as the sugar is very hot and will produce steam when the heavy whipping cream is added. Once all cream is incorporated, place the saucepan back on the stove over medium low heat and stir constantly for 30 more seconds. Remove pan from heat
  • Add toasted pecans into the caramel sauce and stir together. On a parchment lined baking sheet, drop spoonfuls of pecan / caramel mixture making clusters. Place in the refrigerator to set
  • Break or cut the chocolate bars into small pieces. Place in a microwave safe bowl and heat in the microwave for 30 seconds, power level 50 increments until completely melted, stirring in between each time. Remove clusters from the refrigerator and dip into melted chocolate until they are completely coated chocolate. Sprinkle with sea salt flakes and set aside until chocolate has hardened. Store in an airtight container in the refrigerator

INGREDIENTS:
STRAWBERRY LAYER
2 lbs fresh strawberries hulled and sliced
1/2 cup sugar
1 lemon juiced
2 tsp vanilla extract

MASCARPONE CREAM
2 cups cold heavy whipping cream
16 oz mascarpone cheese softened
2/3 cup powdered sugar
2 tsp vanilla extract

TO ASSEMBLE
14 oz ladyfinger cookies (Savoiardi)
1/2 cup strawberry jam or preserves (optional but delicious)
Extra strawberries for topping

Prep the Strawberries:
In a large bowl, combine the sliced strawberries, sugar, lemon juice, and vanilla. Let sit for 15-30 minutes until juicy.

Make the Mascarpone Cream:
In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla until stiff peaks form. In a separate bowl, gently mix mascarpone until smooth, then fold the whipped cream into the mascarpone until light and fluffy.�
Assemble the Layers:
Lightly dip each ladyfinger into the strawberry syrup (just a quick dunk, don’t soak!)��Arrange a full layer of ladyfingers in the bottom of a 9×13 inch dish. You may need to cut some of the ladyfingers to fit.��Spread half the mascarpone cream over the ladyfingers.��Spoon strawberry jam swirls over the cream (optional but adds amazing flavor), then layer on the macerated strawberries, saving a few spoonfuls to serve on the side.��Repeat the layers: dipped ladyfingers, remaining mascarpone cream, and more strawberry jam swirls for decoration on top.

Chill at least 6 hours before serving, overnight is even better! Garnish with extra sliced strawberries when ready to serve.

The past couple weeks have been full in the best way. Between kids’ sports, family time, and having my Grandma here (she’s 88 and visiting from New Jersey), I just wanted to slow down and really be present for it all.

A lot of real life, a lot of good food, and a lot of moments I didn’t want to rush through.

I’ve missed being on here and sharing with you. Easing back in this week and excited to share more 🫶🏼

INGREDIENTS 
6 cups romaine lettuce chopped (about 3 small heads)
1 small red onion, diced
2 cups frozen peas, defrosted
1 red bell pepper, chopped
7 hard boiled eggs, sliced
1 lb thick cut bacon, cooked and chopped
1 1/2 cups cheddar or colby jack cheese, freshly shredded

DRESSING
1/2 cup mayonnaise
1/2 cup sour cream
1/2 tbsp sugar
1 1/2 tbsp apple cider vinegar
Salt and pepper to taste

INSTRUCTIONS 
Add chopped romaine lettuce to the bottom of a trifle bowl or large glass bowl.

Layer red onion, red bell pepper, and peas around the edges so they are visible from the outside.

Press sliced eggs against the glass for a layered look. Chop the remaining eggs and add them to the center to fill it in evenly.

In a medium bowl, mix together mayonnaise, sour cream, sugar, apple cider vinegar, salt, and pepper until smooth. Spoon the dressing into the center, then gently spread it outward to seal the top.

Sprinkle shredded cheese evenly over the dressing, then top with chopped bacon.

My dad (who doesn’t bake at all) made this cake when I was little, and it’s one of my fav core Easter memories 🤍 It’s so cute, fun to get kids involved with, and instantly makes everything feel a little more fun and special!

INSTRUCTIONS:
Bake your favorite cake in two 8-inch round pans. Let them cool completely, then wrap and freeze for easier cutting.

Keep one cake whole for the face. Cut the second cake to create the ears and bow tie, then arrange everything on a platter.

Frost with white icing and cover with shredded coconut (leave a little space in the ears for pink frosting). 

Decorate with gumdrops, jelly beans, fruit punch straws, or whatever candy you have on hand!
