Dirty rice is a rich and filling side dish that infuses fluffy rice with cajun spices, the holy trinity of cooking, and buttery flavor. This recipe cooks U.S.-grown long grain white rice in beef broth and is then tossed into browned sausage to give the rice that classic “dirty” color.

This post is sponsored by USA Rice. All opinions are my own and in my own words. I hope you enjoy! A fun fact: the US rice industry provides over 125,000 critical jobs in rural areas throughout the country, growing roughly 20 billion pounds of rice! Now that’s something we can all get behind.

Dirty Rice

*Servings: 6

Ingredients

  • 1 ½ cups U.S.-grown long grain white rice
  • 2 cups beef broth
  • 2 bay leaves
  • 1 tablespoon olive oil
  • 1 pound mild ground sausage
  • 2 tablespoons butter
  • ½ large green bell pepper, diced
  • 1 small onion, diced
  • 3 celery stalks, diced
  • 2 garlic cloves, minced
  • 1 teaspoon creole seasoning, such as Tony Chachere seasoning
  • ½ teaspoon ground pepper
  • Green onions, green parts sliced
  • Hot sauce (optional), for serving

Instructions

  • In an instant pot add rice, beef broth, and bay leaves. Turn the instant pot on and hit the rice setting. Once the rice time is up, let the instant pot natural release for 20 minutes then turn the vent knob to venting position before removing the rice from the instant pot
  • Over medium heat, add olive oil to a skillet. Once oil is hot, add sausage and brown the meat – breaking into crumbles as it cooks, about 5-7 minutes. Move the sausage to the outer edges of the skillet and add butter, let melt. Add in bell pepper, onion, celery, garlic, creole seasoning, and ground pepper. Stir until combined and cook until vegetables are translucent
  • Add in rice and gently fold the rice into the sausage mixture, season with salt and pepper to taste. Top with green onions and serve

Okay I know Easter is basically over… but you need Okay I know Easter is basically over… but you need to save this for next year 🐰✝️ Or honestly, just make it all spring long 🌸

My dad (who doesn’t bake at all) made this cake when I was little, and it’s one of my fav core Easter memories 🤍 It’s so cute, fun to get kids involved with, and instantly makes everything feel a little more fun and special!

INSTRUCTIONS:
Bake your favorite cake in two 8-inch round pans. Let them cool completely, then wrap and freeze for easier cutting.

Keep one cake whole for the face. Cut the second cake to create the ears and bow tie, then arrange everything on a platter.

Frost with white icing and cover with shredded coconut (leave a little space in the ears for pink frosting).

Decorate with gumdrops, jelly beans, fruit punch straws, or whatever candy you have on hand!

SAVE this for spring or next Easter 🐰

INGREDIENTS:

Chicken Marinade
1 1/2 lbs chicken breast, sliced into tenders
1 1/2 cups whole milk
1 1/2 tbsp lemon juice
1/2 tbsp garlic powder
1/2 tbsp onion powder
1/2 tbsp paprika
1 tsp salt
1 tsp black pepper

Seasoned Flour Coating
1 1/2 cups all purpose flour
1/2 cup cornstarch
1 tsp garlic powder
1 tsp salt
1/2 tsp paprika
1/2 tsp black pepper

Sauce
1/2 cup mayonnaise
1/4 cup ketchup
2 tsp Worcestershire sauce
1/2 tsp garlic powder
1 tsp cracked black pepper
Salt, to taste

Oil for frying
For Serving: French fries, Texas toast, and coleslaw

Instructions:
In a large bowl, combine the chicken and all marinade ingredients. Mix well, cover, and refrigerate overnight.

In another bowl, whisk together all seasoned flour coating ingredients. Remove the chicken from the marinade, allowing excess liquid to drip off. Dredge each piece in the seasoned flour coating, pressing firmly to coat. Lift and gently shake off excess flour, then place on a wire rack set over a sheet pan.

Let the chicken rest for 5 minutes, then dredge again in the seasoned flour coating. Return to the rack and let sit for another 15 minutes. This helps create that extra crispy texture.

In a small bowl, mix all sauce ingredients together and refrigerate until ready to use.

Heat oil in a heavy bottom pan to 350°F. Fry the chicken in batches, being careful not to overcrowd the pan. Cook for about 3 minutes per side, or until golden brown, crispy, and fully cooked.

Serve with sauce, French fries, Texas toast, and coleslaw.
