This Chinese Smashed Cucumber Salad is simple, refreshing, and one of those recipes that disappears almost immediately once it hits the table. At home, cucumbers have always been divided between my kids. One will snack on them nonstop while the other normally avoids them completely. Somehow this salad changed everything. Now both of them reach for seconds every time I make it.

The smashing technique creates rough edges that soak up the dressing, giving every bite bold flavor while keeping that fresh crunch.

Chinese Smashed Cucumber Salad

This Chinese Smashed Cucumber Salad combines lightly crushed cucumbers with a garlic soy dressing made with black vinegar, sesame oil, and chili crunch. Smashing the cucumbers helps them absorb flavor while keeping their signature crunch.

Ingredients  

  • 5 mini cucumbers
  • 2 garlic cloves minced
  • 1 tsp soy sauce
  • 1 tsp black vinegar
  • 1 tsp sesame oil
  • 1/2 tsp honey
  • 1/8 tsp white pepper
  • 1 tsp sesame seeds
  • Chili crunch or chili oil for serving

Method 

  • Place cucumbers on a cutting board and gently smash them lengthwise using the flat side of a knife. Use caution while smashing.
  • Once slightly broken apart, cut cucumbers into bite size pieces and transfer to a serving bowl.
  • In a small bowl, mix garlic, soy sauce, black vinegar, sesame oil, honey, white pepper, and sesame seeds.
  • Pour dressing over cucumbers and gently toss until evenly coated.
  • Finish with a drizzle of chili crunch or chili oil before serving.
  • Serve immediately or chill briefly before serving for extra refreshment.

I love making classic copycat cake recipes for my birthday, and this one did not disappoint. It tastes just like the real deal, is super easy to make, and costs a fraction of the price.

INGREDIENTS 
1 box devil’s food cake mix
1 (3.9 oz) box instant chocolate fudge pudding
1 cup sour cream, room temperature
4 eggs, room temperature
1/2 cup milk
1/2 cup avocado oil or vegetable oil
1 tsp espresso powder
1 1/4 cups chocolate chips

Frosting
8 oz cream cheese, softened
1/3 cup butter, softened
1 tsp vanilla
3 cups powdered sugar

For the Bundt Pan
Butter
Cocoa powder

Preheat oven to 350°F.

In a large mixing bowl, add cake mix, pudding mix, sour cream, eggs, milk, oil, and espresso powder. Mix until combined. Fold in chocolate chips.

Butter a bundt pan well, then add about 1 tablespoon cocoa powder and rotate the pan to coat all the grooves.

Pour batter into the prepared pan. Bake for 35–40 minutes, beginning to check around 35 minutes. The cake is done when a toothpick inserted into the center comes out clean or with a few moist crumbs. You may hit a chocolate chip, so test a couple spots.

Remove from oven and cool in the pan for 10 minutes.

Turn cake out onto plastic wrap, wrap tightly while still warm, and place in the freezer for at least 24 hours.

To make frosting, beat cream cheese and butter until smooth. Add vanilla and powdered sugar and whip until creamy.

Once the cake is thawed, pipe frosting starting from the outer edge of the cake and work inward toward the center to create the classic Nothing Bundt Cake style stripes.

INSTRUCTIONS 
Cut chicken into 1-inch pieces. In a bowl, mix chicken, garlic, whiskey, soy sauce, honey, and egg whites. Marinate 15 to 30 minutes.

Add cornstarch and toss until fully coated.

Heat oil in a heavy bottom pot or cast iron skillet to 350°F. Fry chicken in batches until crispy and golden brown. Transfer to a cooling rack.

Add chicken to a skillet over medium heat. Pour sauce over top and toss to coat. Simmer a few minutes until thickened.

Top with sesame seeds + green onions. Serve over rice and enjoy!
