Snowman Cake Pops

These snowman cake pops are the perfect treat to get your family in the Holiday mood. They are so cute and my favorite part is, they don’t have to look perfect, let it be a melting or textured snowman. It’s okay! Made with delicious leftover vanilla cupcakes, these snowman cake pops couldn’t be any easier.

These snowman cake pops are the perfect treat to get your family in the Holiday mood. They are so cute and my favorite part is, they don’t have to look perfect, let it be a melting or textured snowman. It’s okay! Anyone with one of these adorable snowmen in their hands will be beaming from ear to ear. Also I know cake pops get a bad rep because they can be labor intense to make, but they don’t have to be! I’m making these cake pops with leftover cupcakes that I had from a holiday get together; it doesn’t get easier than that!

Prep Tips

Cupcakes: I’m using leftover cupcakes that I had already baked for an event that I decorated with frosting on top, but if you don’t have cupcakes ready to use, you can use on single layer un-iced 8 inch cake with about 1 cup of frosting. I have not used store bought cupcakes, however I think they would work great too! The biggest difference might be in the frosting, sometimes store bought cupcakes can tend to have a waxy frosting – however you can really give these that homemade taste if you scrape off the frosting and make your own.

Snowman Cake Pops

Ingredients

  • 5 vanilla cupcakes, frosted
  • 5 vanilla cupcakes, unfrosted
  • 1/2 – 1 (12 ounce) bag white chocolate chips
  • Mini milk chocolate M&Ms
  • Black candy melts
  • Blue or any other color of choice candy melts
  • 5 lollipop sticks

Instructions

  • In a large mixing bowl, crumble up the cupcakes until there are no big clumps and the frosting is fully incorporated throughout the mixture. Form a ball and if the texture is too crumbly, add more frosting (see frosting recipe below if needed)
  • Form 5 smaller cake balls and 5 larger cake balls. Place in the freezer for at least 30 minutes
  • Melt white chocolate according to the package directions. Remove cake pops from freezer. Stack smaller cake pop ball onto the larger cake pop ball forming the snowman’s body. Dip one end of the lollipop stick into the melted white chocolate and insert into the top of the stacked cake pop, continue until all 5 cake pops have sticks in them. Dip the cake pop into the melted candy melts, rolling them around in the bowl until fully coated or using a spoon, spoon white chocolate over the cake pop. Set the snowman cake pop onto a parchment or wax paper lined baking sheet, so that the cake pops are standing upright. Using mini M&Ms place one on each side of the snowman’s head to create earmuffs. Then an orange M&M, placed vertically sideways into the middle of the face to create a “carrot” nose. Using melted black candy melts in a piping bag, pip on eyes, mouth, and buttons. Then using melted, color of choice, candy melts in a piping bag, pip on the scarf and connect the earmuffs together by piping on a line between the two M&Ms over the top of the snowman’s head
  • Once candy coating is dry, place the cake pops in the refrigerator until ready to serve

Frosting Recipe

  • 1 stick butter
  • 1/2 tsp pure vanilla extract
  • 1 3/4 cup powdered sugar
  • 1 tsp heavy cream
  • dash of salt

Instructions:

  • With an electric mixer, mix all ingredients together until light and fluffy

INGREDIENTS:
750 ml Prosecco (1 full bottle), chilled
2 cups Limoncello, chilled
1 cup sparkling water, I used lemon sparkling water
Ice
Fresh lemon slices and mint for garnish (optional)

INSTRUCTIONS:
In a large pitcher, combine chilled Prosecco, Limoncello, and sparkling water.

Add ice and lemon slices.

Pour into glasses over ice and garnish with another lemon slice and fresh mint if you like.

INGREDIENTS:
STRAWBERRY LAYER
2 lbs fresh strawberries hulled and sliced
1/2 cup sugar
1 lemon juiced
2 tsp vanilla extract

MASCARPONE CREAM
2 cups cold heavy whipping cream
16 oz mascarpone cheese softened
2/3 cup powdered sugar
2 tsp vanilla extract

TO ASSEMBLE
14 oz ladyfinger cookies (Savoiardi)
1/2 cup strawberry jam or preserves (optional but delicious)
Extra strawberries for topping

Prep the Strawberries:
In a large bowl, combine the sliced strawberries, sugar, lemon juice, and vanilla. Let sit for 15-30 minutes until juicy.

Make the Mascarpone Cream:
In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla until stiff peaks form. In a separate bowl, gently mix mascarpone until smooth, then fold the whipped cream into the mascarpone until light and fluffy.�
Assemble the Layers:
Lightly dip each ladyfinger into the strawberry syrup (just a quick dunk, don’t soak!)��Arrange a full layer of ladyfingers in the bottom of a 9×13 inch dish. You may need to cut some of the ladyfingers to fit.��Spread half the mascarpone cream over the ladyfingers.��Spoon strawberry jam swirls over the cream (optional but adds amazing flavor), then layer on the macerated strawberries, saving a few spoonfuls to serve on the side.��Repeat the layers: dipped ladyfingers, remaining mascarpone cream, and more strawberry jam swirls for decoration on top.

Chill at least 6 hours before serving, overnight is even better! Garnish with extra sliced strawberries when ready to serve.

The past couple weeks have been full in the best way. Between kids’ sports, family time, and having my Grandma here (she’s 88 and visiting from New Jersey), I just wanted to slow down and really be present for it all.

A lot of real life, a lot of good food, and a lot of moments I didn’t want to rush through.

I’ve missed being on here and sharing with you. Easing back in this week and excited to share more 🫶🏼

INGREDIENTS 
6 cups romaine lettuce chopped (about 3 small heads)
1 small red onion, diced
2 cups frozen peas, defrosted
1 red bell pepper, chopped
7 hard boiled eggs, sliced
1 lb thick cut bacon, cooked and chopped
1 1/2 cups cheddar or colby jack cheese, freshly shredded

DRESSING
1/2 cup mayonnaise
1/2 cup sour cream
1/2 tbsp sugar
1 1/2 tbsp apple cider vinegar
Salt and pepper to taste

INSTRUCTIONS 
Add chopped romaine lettuce to the bottom of a trifle bowl or large glass bowl.

Layer red onion, red bell pepper, and peas around the edges so they are visible from the outside.

Press sliced eggs against the glass for a layered look. Chop the remaining eggs and add them to the center to fill it in evenly.

In a medium bowl, mix together mayonnaise, sour cream, sugar, apple cider vinegar, salt, and pepper until smooth. Spoon the dressing into the center, then gently spread it outward to seal the top.

Sprinkle shredded cheese evenly over the dressing, then top with chopped bacon.

Okay I know Easter is basically over… but you need Okay I know Easter is basically over… but you need to save this for next year 🐰✝️ Or honestly, just make it all spring long 🌸

My dad (who doesn’t bake at all) made this cake when I was little, and it’s one of my fav core Easter memories 🤍 It’s so cute, fun to get kids involved with, and instantly makes everything feel a little more fun and special!

INSTRUCTIONS:
Bake your favorite cake in two 8-inch round pans. Let them cool completely, then wrap and freeze for easier cutting.

Keep one cake whole for the face. Cut the second cake to create the ears and bow tie, then arrange everything on a platter.

Frost with white icing and cover with shredded coconut (leave a little space in the ears for pink frosting). 

Decorate with gumdrops, jelly beans, fruit punch straws, or whatever candy you have on hand!

SAVE this for spring or next Easter 🐰
